Deliciously Simple Lentil Curry
You can cook up an amazing, authentic lentil curry right in your own kitchen without much effort.

Take a mug of lentils, wash 3-4 time in water until the water runs clear and throw into a pot.

Cover with water and add
1 tsp of salt
1 tsp of garam masala ( curry powder )
1/2 tsp of haldi
1 tsp of cumin powder
Lid and bring to the boil. Once boiled put on a low heat and simmer for about 20 minutes.

While simmering watch that the water doesn't dry up adding hot water as needed. The lentils will double in size. After 20 minutes simmer until you have the consistency you want.

Now the fun part, the tarka or kick.
Finely chop an onion, about 3 cloves of garlic and a couple of chillies.

First fry the onions in oil until they are brown, then add the garlic and chillies and fry some more. You may need to add more oil.

Once the onions are well caramelised throw into the pot with the lentils and mix well.
If you have some fresh coriander - chop it up and thow it in as well and you're done.
Leave to stand for around 10 minutes before serving with either rice, chapattis or lightly toasted pitta bread.
